1st Popsicle of The Year!

I was online shopping earlier this week to replace a fry pan and thought it was time to treat myself (and my son) to a little Summer fun. Having a popsicle mold in the house opens up a whole new world of fun in the kitchen.
A healthy treat to curb my sweet tooth. And, melt my heart, watching my toddler eat his first popsicle!
Blueberry Coconut Chia Pops
- 1 can coconut milk (full fat)
- 1 1/2 cups blueberries (I used frozen organic)
- 1/2 frozen banana
- 2 tbs maple syrup
- 2 tbs chia seeds
- 1/4 cup filtered water
Begin by soaking chia seeds in water. Set aside for 5 mins. Using a high speed blender, add coconut milk, blueberries, banana and maple syrup to blender. Add chia gel. Blend on high for 60-90 seconds. Pour into popsicle molds and freeze. I used these molds and had enough mixture for approx 2 more popsicles (I refrigerated the leftover mixture and we as breakfast pudding).
