Friendship & Soup!

Today I found two lovely gifts outside my front door. You know you have an amazing neighbor & friend when emerald green juice and homemade chicken stock appear when you need it most. Heaven! We share a lot in common. We live under the same roof (ie: apartment building), we both have toddler boys, we constantly discuss our romance with organic produce, and most importantly, we have an affinity for feeding our families healthfully. We also exchange lots of recipes.

My friend T's recipe for chicken stock is so simple and so delicious. Perhaps you can make it and surprise a friend! Hands down the tastiest gift I've received all year!

Chicken Stock

Ingredients:

3 stalks celery

1 head of garlic

1 huge yellow onion

4 carrots

5 sprigs of thyme

1 inch piece ginger, peeled

1/2 tsp salt

1 whole chicken

approx 8 cups of water (fill large pot halfway)

Prepareation: Throw all ingredients in a large pot and add water. Bring to a boil. Reduce heat to low and simmer for 1-2 hours. Strain broth.
