Good to Go Granola!

Some foods are just infinitely better when homemade. For us, granola is definitely at the top of that list. Making granola at home is significantly cheaper and can be much healthier than the store bought stuff! The best part? It is so darn easy.

Just like a morning scramble, once you get the base down, simply add ingredients to your liking. Don’t like raisins? Nix ‘em! Feeling like you need extra fiber? Throw in some flax or chia seeds! One of the best things about homemade granola is that you can control exactly what goes into it- no extra sugars or other sneaky or salty ingredients. Here is a quick, healthy version that you can make in around 30 minutes.

Honey-Drizzled Oats*

- 2.5 cups old fashioned oats (organic & gluten-free, if possible)
- Drizzle 6 tbs of local honey
- Add a handful of unsweetened, flaked coconut
- Toss is a few tbs of cinnamon, to taste
- Plus a few tsp of nutmeg, to taste
- And 2 tbs of coconut oil

Mix all of the ingredients in a bowl until spread evenly, then lay the oats evenly spread onto a foiled cookie sheet. Place the mixture in the oven at 300 degrees for about 20 minutes. Keep an eye on the oats until they are golden brown.
*Sidenote: We like to do a taste test at some point and make sure the amount of honey, cinnamon, and nutmeg ratios are right. The nutmeg specifically should be used cautiously- remember, you can always add more.

After you take the dried oats of the oven, allow them to cool, and mix them in a bowl with a combination of dried fruit, nuts, seeds to add. This is customizable, so have fun with it.

We chose the following for our granola:

- Dried cherries, a handful or two, highly recommended!
- Unsweetened, flaked coconut, a handful
- Chia Seeds, a handful
- Chopped medjool dates, a handful

Anything else you want! 

*Use organic ingredients whenever possible

Feel free to add more oats to the recipe to make a larger batch. With 2.5 cups, we made just a bit more than what fits in the jar in the photo above. To store, simply pack in an airtight container for up to two weeks.
