Cucumber Tomato Caprese
Italian appetizer for breakfast? Yes please!
Prep Time: 30 mins
- 1 cucumber, peeled & chopped into cubes
- 1 medium tomato, diced into cubes
- 1/4 cup fresh basil thinly chopped
- 1/2 tsp dried oregano
- 2 tbs olive oil
- pinch of sea salt
- 1/2 cup Green yogurt
Combine first 5 ingredients together in a bowl. Toss well. Divide salad into 2 bowl. Top each salad with ¼ cup greek yogurt. Enjoy!
