Soba Noodle Pasta with Kale & White Beans
Oh yes you may have your pasta!

- 1/2 pack of soba noodles
- 1 can cannellini beans, rinsed and drained
- 2 leaves of lacinato kale, ribs removed, finley chopped
- 2 tbs fresh parsley, chopped
Boil soba noodles in a pot with water over medium-high heat until cooked. Drain and return to pot.
- 1 cup fresh bails
- 1/3 cup olive oil
- 2 1/2 tbs pine nuts
- 3 brazil nuts
- 4 tbsp Parmesan cheese
- 2 tsp minced garlic
- 1/8 tsp cayenne pepper
Place the basil in a high-speed blender. Pour in about 1 tbs of the olive oil and blend basil into a paste. Gradually add pine nuts, Brazil nuts, Parmesan cheese, garlic, cayenne and remaining oil. Continue to blend until smooth.
Add 1/2 cup fresh pesto to soba noodles. Add beans and kale and toss unti mixed in. Serve on plate and garnish with fresh parsley.
