Curried Chickpeas & Cauliflower
Spice it up! Curry, a warm, complex flavor for your veggies!
Prep Time: 30 mins
- 1 tsp curry powder
- 1 small onion, chopped
- 2 tbs coconut oil
- 1 1/2 cups chopped cauliflower
- 3/4 cup canned chickpeas, rinsed well and drained
- 2 tbs golden raisins
- 1 cup cooked brown rice
- 1 scallion, chopped
- 1/4 cup fresh cilantro, chopped
Melt coconut oil in frying pan over medium heat. Saute curry powder and onion in coconut oil for 3 mins. Add cauliflower and cook for 8 mins or until tender. Add chickpeas and raisins and cook for 3-4 mins or until warm. Place curried veggies over ricea nd top with scallion and cilantro.
