Raw Kale & Mango Salad
A creative spin on salad, make it with kale!
Prep Time: 20 mins
- 1 bunch lacinato kale, ribs removed
- 3 scallions
- 1/4 cup olive oil
- juice of 1/2 lemon
- 1/4 bunch Italian parsley
- 1/2 bunch cilantro
- 1 cup mango, diced (fresh or defrosted frozen)
- 1/2 tsp cayenne pepper
- 1/2 cup crumbled feta, if desired
Wash and dry kale. Finely chop kale and scallions and place in large bowl. Add olive oil. Massage kale by scrunching with both hands to work in the olive oil - approximately 2-3 minutes. Kale should be evenly covered with oil and turn vibrant green. Toss in remaining ingredients and enjoy.
