- 1/2 cup peas, fresh or frozen, thawed in cold water
- 1 tsp olive oil
- 2 sprigs fresh mint, finely chopped
- 1/8 tsp lemon zest
Toss peas and olive oil together in small bowl. Fold in mind and lemon zest.
