Topless Egg Sando

Less bread, more greens!

  • 1 eggs
  • 1 tsp ghee (clarified butter)
  • 2 tsp olive oil
  • 1/4 avocado
  • 1 medium sized romaine lettuce leaf
  • red onion, thinly sliced, if desired
  • dash of cayenne pepper
  • dash of sea salt
  • 1 ciabatta roll or whole wheat English muffin, cut in half


In a small frying pan, melt ghee over medium heat. Cut ciabatta roll (or English muffin) in half and toast one side (save other side for tomorrow's breakfast). Drizzle toasted roll with olive oil. Spread avocado. Add egg, dash of cayenne pepper, pinch of sea salt, onion and top with leaf of romaine.
