Watermelon Raspberry Parfait

Prep Time: 10 mins
- 2 cups watermelon, cut into 2 inch pieces
- 1 cup fresh raspberries
- Juice of 1 lime
- 1 tbs fresh mint, coarsley chopped
- 3/4 cup 2% fat plain yogurt
- Drizzle of honey for sweetner (optional)
Combine fruit, juice and mint in a medium bowl. Serve topped with yogurt and drizzle of honey, if desired. Garnish with sprig of mint.
1-2 eggs prepared the way you like. Enjoy 20-30 minutes after your fruit salad.
