Pear & Rocket Salad
Prep Time: 15 mins
- 3 tbs olive oil
- 1 1/2 tbs balsamic vinegar
- 3 tbs vegetable broth
- 1/2 tsp Dijon mustard
- 2 tbs shallots, minced
- sea salt, to taste
- pepper, to taste
- 1/2 cup walnuts pieces
- 2 bosc pears, ripe, cut into bite-size pieces
- 2 tbs fresh dill, chopped
Dressing: Mix first 5 ingredients together.
Salad: Toast walnuts in a small dry frying pan 2-3 mins or until fragrant. In a medium sized bowl, toss arugula, pears and walnuts together. Toss with dressing, sprinkle in dill and serve.
Add an Egg!
Need more than a bowl of salad? Serve with 1 hard boiled egg, sliced.
